Cheese for freezing weather

French onion soup with Gruyere cheese topped garlic bread.
Soup is very easy to make, follow any good recipe but use chicken stock and plenty of onions and some garlic. The magic comes from the croutons and the dunking slices.
A shop bought garlic baguette fine. Cook as per instructions, when done cover each slice with a very generous layer of Gruyere and grill until the cheese has melted and melded into the bread. The crusty ends of make wonderful croutons and the slices taste fantastic when used for dunking.
Trust me it will be delicious and addictive but beware it may cause a little flatulence.

Its hardly rocket science !. I was offering a cheap, warming and healthy recipe using my favorite ingredient, hopefully for all to enjoy. It's great for keeping the cold out when enjoying outside activities such as watching footie or sea fishing.
I have an even simpler recipe for stuffed onions.
Take 1 large onion and......😳

Cutting away any areas of cheese that have become mouldy is perfectly acceptable.

I don't really rate wine and cheese, so had Quavers and Hooch on the train home from Boston instead

Cheesy mash with spring onions and smoked mackerel.
If making mashed potato is beyond you, please follow stuffed onion instructions above, but with a potato.
Break the smoked mackerel into pieces and chop a bunch of onions into shortish lengths lengths and gently mix into the mash. For an extra treat, add some small cubes of cheese into the mix (this will add a gooey surprise to the eating). Use a bowl as a mould to form the mix into a dome shape. Then drape cheese over the top and sides of the mix and grill until the cheese has melted. Personally I top the mix with Somerset Cheddar and use Double Gloucester for the sides.......Pour large glass of wine / port and enjoy.
