Hereford have a huge following - people share links. No suprise our site couldn't cope.
There are a few clubs with big support. We may have issues on Tuesday as South Shields have a big support.

We may need to launch the stream onto a third party platform....

The stream is on a third party platform. It's not hosted on the clubs wordpress site. It's merely embedded. The buffering issues would be entirely the fault of the provider:

I suspect it their service just didn't have time to ramp up as the feed only started 10 minutes before kick off. Maybe starting the feed an hour early and just having it show warm ups with no commentary, allows people to stagger in like they would a match and doesn't overload the service in one go. Microservices are elastic, but they can be slow to ramp up and free more resources if the usage suddenly ramps up.

Could be worse. Both Dagenham and Aldershot have invested in an AI camera that's supposed to follow the action by identifying where the ball is.
